I'm so proud of myself. I used a couple of radishes in tonight's dinner. I made carnitas tacos. I got the carnitas from Trader Joes, threw it in a dutch oven for 1.5 hours at 300* with some green enchilada sauce from Rick Bayless. Shredded the pork about 15 minutes before serving and threw it back in the oven till dinnertime so the pork was very saucy. Grilled some organic corn tortillas, then topped the carnitas with cilantro, tomatoes, cheese and radishes. I admit the radishes were really tasty on these tacos. I even forced myself to eat a slice while I was cutting them to acclimate myself to the flavor and it was pretty good solo. I'm not gonna bite into a whole radish by itself, but if it's sliced thin, I'll snack on a slice or two.
